Instructions

  1. In a large bowl, combine the diced tomatoes, cucumbers, red onion, and green bell pepper.
  2. Add the chopped cilantro and mint to the bowl with the vegetables.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the vegetable mixture and toss gently to combine.
  5. Taste and adjust seasoning with more salt or pepper if needed.
  6. Let the salad sit for 10 minutes before serving to allow the flavors to meld.
