Afghan salad
A fresh and simple Afghan salad made with chopped vegetables and herbs, dressed with lemon juice and olive oil.

Instructions
- In a large bowl, combine the diced tomatoes, cucumbers, red onion, and green bell pepper.
- Add the chopped cilantro and mint to the bowl with the vegetables.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
- Pour the dressing over the vegetable mixture and toss gently to combine.
- Taste and adjust seasoning with more salt or pepper if needed.
- Let the salad sit for 10 minutes before serving to allow the flavors to meld.
