Instructions

  1. In a large bowl, combine lemon juice, lemon zest, olive oil, minced garlic, oregano, thyme, salt, and black pepper.
  2. Add chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours.
  3. Preheat the oven to 200 degrees Celsius.
  4. Place the marinated chicken thighs in a baking dish. Arrange quartered potatoes around the chicken.
  5. Pour chicken broth into the dish and drizzle a little more olive oil over the potatoes.
  6. Bake in the preheated oven for 45-50 minutes, or until the chicken is cooked through and the potatoes are tender.
  7. Garnish with chopped parsley before serving.

Prep

  • Marinate chicken thighs for at least 2 hours in advance.
