Instructions
- In a large bowl, combine lemon juice, lemon zest, olive oil, minced garlic, oregano, thyme, salt, and black pepper.
- Add chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours.
- Preheat the oven to 200 degrees Celsius.
- Place the marinated chicken thighs in a baking dish. Arrange quartered potatoes around the chicken.
- Pour chicken broth into the dish and drizzle a little more olive oil over the potatoes.
- Bake in the preheated oven for 45-50 minutes, or until the chicken is cooked through and the potatoes are tender.
- Garnish with chopped parsley before serving.
Prep
- Marinate chicken thighs for at least 2 hours in advance.
