Green Lemon Chicken and Asparagus

Instructions

  1. In a bowl, combine chicken strips with lemon zest, half of the lemon juice, salt, and pepper. Marinate for at least 30 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add marinated chicken strips to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  4. In the same skillet, add butter and asparagus. Sauté until asparagus is tender-crisp, about 4-5 minutes.
  5. Return the chicken to the skillet. Add chicken broth and remaining lemon juice. Stir to combine and cook for an additional 2-3 minutes.
  6. Garnish with chopped fresh parsley before serving.
