Orzo with Spinach and Feta

Cook orzo with sautéed spinach and mix with crumbled feta cheese for a simple and flavorful dish.

Chicken Broth (low sodium)1Liter

Instructions

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the orzo to the boiling broth and cook for about 8-10 minutes until al dente, stirring occasionally.
  3. While the orzo is cooking, heat olive oil in a large skillet over medium heat.
  4. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  5. Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes.
  6. Drain the cooked orzo and add it to the skillet with the spinach.
  7. Stir in the crumbled feta cheese, lemon zest, and lemon juice.
  8. Season with salt and freshly ground black pepper to taste.
  9. Mix everything well and serve warm.
