Salmon with Roasted Vegetables
Oven-baked salmon with a mix of roasted vegetables seasoned with herbs and olive oil.

Instructions
- Preheat the oven to 200 degrees Celsius.
- Place the salmon fillet on a baking sheet lined with parchment paper.
- Drizzle 1 tablespoon of olive oil over the salmon and season with salt, pepper, and minced garlic.
- Arrange lemon slices on top of the salmon.
- In a large bowl, combine carrots, zucchini, red bell pepper, and red onion.
- Add 2 tablespoons of olive oil, salt, pepper, and thyme to the vegetables and toss to coat.
- Spread the vegetables around the salmon on the baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and the vegetables are tender.
- Garnish with chopped parsley before serving.
