Salmon with Roasted Vegetables

Instructions

  1. Preheat the oven to 200 degrees Celsius.
  2. Place the salmon fillet on a baking sheet lined with parchment paper.
  3. Drizzle 1 tablespoon of olive oil over the salmon and season with salt, pepper, and minced garlic.
  4. Arrange lemon slices on top of the salmon.
  5. In a large bowl, combine carrots, zucchini, red bell pepper, and red onion.
  6. Add 2 tablespoons of olive oil, salt, pepper, and thyme to the vegetables and toss to coat.
  7. Spread the vegetables around the salmon on the baking sheet.
  8. Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and the vegetables are tender.
  9. Garnish with chopped parsley before serving.
