Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent.
- Add ground beef to the skillet, cook until browned. Drain excess fat.
- Stir in taco seasoning, diced tomatoes with juice, and beef broth. Bring to a simmer.
- Break spaghetti in half and add to the skillet. Stir to combine, ensuring spaghetti is submerged in liquid.
- Cover and cook for 12-15 minutes, stirring occasionally, until spaghetti is al dente and liquid is mostly absorbed.
- Stir in shredded cheddar cheese until melted and well combined.
- Season with salt and black pepper to taste. Garnish with chopped cilantro before serving.
