Queso chicken and rice

Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent.
- Add chicken pieces to the skillet, season with cumin, paprika, salt, and black pepper. Cook until chicken is browned and cooked through.
- In a separate pot, bring chicken broth to a boil. Add rice, cover, and reduce heat to low. Cook until rice is tender and liquid is absorbed.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in whole milk, cooking until thickened.
- Remove saucepan from heat and stir in shredded cheddar cheese until melted and smooth, creating the queso sauce.
- Combine cooked chicken, rice, and queso sauce in a large serving dish. Mix well to coat everything with the sauce.
- Garnish with chopped cilantro before serving.
