Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until onion is translucent.
  3. Add beef cubes to the pot and brown on all sides.
  4. Stir in the tomato puree, cumin, paprika, bay leaves, salt, and black pepper.
  5. Pour in the beef broth and bring to a simmer.
  6. Add the potato cubes, cover the pot, and simmer for 45-60 minutes until beef and potatoes are tender.
  7. Adjust seasoning with salt and pepper if needed.
  8. Garnish with chopped cilantro before serving.
