Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic, sauté until onion is translucent.
- Add beef cubes to the pot and brown on all sides.
- Stir in the tomato puree, cumin, paprika, bay leaves, salt, and black pepper.
- Pour in the beef broth and bring to a simmer.
- Add the potato cubes, cover the pot, and simmer for 45-60 minutes until beef and potatoes are tender.
- Adjust seasoning with salt and pepper if needed.
- Garnish with chopped cilantro before serving.
