Grilled corn on the cob topped with mayonnaise, cheese, lime, and chili powder.

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the corn with melted butter and season with salt.
  3. Grill the corn for about 10-15 minutes, turning occasionally, until charred and cooked through.
  4. Remove the corn from the grill and let it cool slightly.
  5. Spread mayonnaise evenly over each ear of corn.
  6. Sprinkle crumbled cotija cheese generously over the mayonnaise-coated corn.
  7. Sprinkle chili powder over the cheese to taste.
  8. Garnish with chopped cilantro.
  9. Serve with lime wedges on the side for squeezing over the corn.
