Filipino Chicken Adobo

Filipino Chicken Adobo is a braised dish using chicken, soy sauce, vinegar, and spices, simmered until tender.

Instructions

  1. In a large bowl, combine chicken, soy sauce, vinegar, garlic, bay leaves, and peppercorns. Marinate for at least 1 hour.
  2. Heat oil in a large pot over medium heat. Add chicken pieces, skin side down, and brown on all sides.
  3. Remove chicken and set aside. In the same pot, sauté sliced onions until translucent.
  4. Return chicken to the pot. Add the marinade, water, and sugar. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 30-40 minutes until chicken is tender.
  6. Remove the lid and simmer for an additional 10 minutes to reduce the sauce.
  7. Serve hot with steamed rice.
