Filipino Chicken Adobo
Filipino Chicken Adobo is a braised dish using chicken, soy sauce, vinegar, and spices, simmered until tender.

Instructions
- In a large bowl, combine chicken, soy sauce, vinegar, garlic, bay leaves, and peppercorns. Marinate for at least 1 hour.
- Heat oil in a large pot over medium heat. Add chicken pieces, skin side down, and brown on all sides.
- Remove chicken and set aside. In the same pot, sauté sliced onions until translucent.
- Return chicken to the pot. Add the marinade, water, and sugar. Bring to a boil.
- Reduce heat to low, cover, and simmer for 30-40 minutes until chicken is tender.
- Remove the lid and simmer for an additional 10 minutes to reduce the sauce.
- Serve hot with steamed rice.
