Frijoles Borrachos is a Mexican dish prepared by simmering pinto beans with bacon, beer, and spices.

Instructions

  1. Rinse and drain the soaked pinto beans.
  2. In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside.
  3. In the same pot, add chopped onion, minced garlic, and chopped jalapeno. Sauté until the onion is translucent.
  4. Add chopped tomatoes and cook for another 2 minutes.
  5. Stir in the drained pinto beans, beer, and chicken broth. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until beans are tender.
  7. Season with salt, black pepper, and cumin. Stir in chopped cilantro and cooked bacon.
  8. Simmer for an additional 10 minutes to blend flavors. Serve warm.
