Instructions
- In a large bowl, combine chicken pieces with onion, bell pepper, scallion, garlic, ginger, thyme, allspice, soy sauce, salt, and black pepper. Mix well to coat the chicken.
- Cover the bowl and let the chicken marinate in the refrigerator for at least 2 hours.
- Heat vegetable oil in a large pot over medium-high heat. Add the marinated chicken pieces and brown on all sides.
- Add chicken broth, tomatoes, carrots, and the whole scotch bonnet pepper to the pot. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 45 minutes, or until the chicken is cooked through and tender.
- Remove the scotch bonnet pepper before serving. Adjust seasoning with additional salt and pepper if necessary.
