Instructions

  1. In a large bowl, combine chicken pieces with onion, bell pepper, scallion, garlic, ginger, thyme, allspice, soy sauce, salt, and black pepper. Mix well to coat the chicken.
  2. Cover the bowl and let the chicken marinate in the refrigerator for at least 2 hours.
  3. Heat vegetable oil in a large pot over medium-high heat. Add the marinated chicken pieces and brown on all sides.
  4. Add chicken broth, tomatoes, carrots, and the whole scotch bonnet pepper to the pot. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 45 minutes, or until the chicken is cooked through and tender.
  6. Remove the scotch bonnet pepper before serving. Adjust seasoning with additional salt and pepper if necessary.
