Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the salmon fillets with olive oil and season with lime juice, salt, and black pepper.
  3. Grill the salmon fillets for 5-6 minutes on each side or until cooked through.
  4. In a bowl, combine diced tomatoes, chopped red onion, minced jalapeno, chopped cilantro, minced garlic, and lime juice to make pico de gallo.
  5. Serve the grilled salmon topped with fresh pico de gallo.
