Instructions

  1. Preheat the oven to 180°C (350°F). Grease and flour a 9x13 inch baking dish.
  2. In a bowl, mix flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat butter and sugar until fluffy. Add egg yolks one at a time, then mix in vanilla.
  4. Gradually add the flour mixture to the butter mixture, alternating with whole milk, beginning and ending with flour.
  5. In a separate bowl, beat egg whites until stiff peaks form. Gently fold into the batter.
  6. Pour batter into the prepared dish and bake for 25-30 minutes or until a toothpick comes out clean.
  7. While the cake bakes, prepare the lime curd. In a saucepan, combine lime juice, lime zest, cornstarch, water, and sugar. Cook over medium heat until thickened.
  8. Whisk egg yolks in a bowl. Gradually add hot lime mixture to yolks, whisking constantly. Return to saucepan and cook until thickened.
  9. Remove from heat and stir in butter until melted. Let cool.
  10. Once the cake is done, let it cool for 10 minutes. Poke holes all over the cake with a fork.
  11. Mix sweetened condensed milk, evaporated milk, and remaining whole milk. Pour over the cake, ensuring it soaks in.
  12. Spread the cooled lime curd over the soaked cake. Refrigerate for at least 2 hours before serving.
