Tres Leches with Lime Curd
Tres Leches with Lime Curd combines a sponge cake soaked in three milks with a tangy lime curd topping.

Instructions
- Preheat the oven to 180°C (350°F). Grease and flour a 9x13 inch baking dish.
- In a bowl, mix flour, baking powder, and salt. Set aside.
- In a large bowl, beat butter and sugar until fluffy. Add egg yolks one at a time, then mix in vanilla.
- Gradually add the flour mixture to the butter mixture, alternating with whole milk, beginning and ending with flour.
- In a separate bowl, beat egg whites until stiff peaks form. Gently fold into the batter.
- Pour batter into the prepared dish and bake for 25-30 minutes or until a toothpick comes out clean.
- While the cake bakes, prepare the lime curd. In a saucepan, combine lime juice, lime zest, cornstarch, water, and sugar. Cook over medium heat until thickened.
- Whisk egg yolks in a bowl. Gradually add hot lime mixture to yolks, whisking constantly. Return to saucepan and cook until thickened.
- Remove from heat and stir in butter until melted. Let cool.
- Once the cake is done, let it cool for 10 minutes. Poke holes all over the cake with a fork.
- Mix sweetened condensed milk, evaporated milk, and remaining whole milk. Pour over the cake, ensuring it soaks in.
- Spread the cooled lime curd over the soaked cake. Refrigerate for at least 2 hours before serving.
