Aloo Gobi
Aloo Gobi is a simple Indian dish made by sautéing potatoes and cauliflower with spices and tomatoes.

Instructions
- Heat vegetable oil in a large pan over medium heat.
- Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onions and sauté until golden brown.
- Add minced garlic, grated ginger, and sliced green chili. Sauté for another minute.
- Add chopped tomatoes and cook until they soften.
- Stir in turmeric powder, coriander powder, and salt. Mix well.
- Add diced potatoes and cauliflower florets. Mix to coat them with the spices.
- Cover the pan and cook on low heat for 20-25 minutes, stirring occasionally, until potatoes and cauliflower are tender.
- Sprinkle garam masala and mix well.
- Garnish with chopped cilantro before serving.
