Aloo Palak
Aloo Palak is a spinach and potato curry cooked with spices and herbs, simmered to blend flavors.

Instructions
- Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onions and sauté until they turn golden brown.
- Add minced garlic, grated ginger, and slit green chilies. Sauté for another minute.
- Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until tomatoes are soft and oil starts to separate.
- Add diced potatoes and mix well with the masala. Cook for 5 minutes, stirring occasionally.
- Add chopped spinach and mix thoroughly. Pour in water, cover the pan, and let it simmer for 15-20 minutes or until potatoes are tender.
- Sprinkle garam masala and mix well. Cook for another 2 minutes.
- Turn off the heat and let the dish rest for a few minutes before serving.
