Aloo Palak

Aloo Palak is a spinach and potato curry cooked with spices and herbs, simmered to blend flavors.

Instructions

  1. Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add minced garlic, grated ginger, and slit green chilies. Sauté for another minute.
  4. Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until tomatoes are soft and oil starts to separate.
  5. Add diced potatoes and mix well with the masala. Cook for 5 minutes, stirring occasionally.
  6. Add chopped spinach and mix thoroughly. Pour in water, cover the pan, and let it simmer for 15-20 minutes or until potatoes are tender.
  7. Sprinkle garam masala and mix well. Cook for another 2 minutes.
  8. Turn off the heat and let the dish rest for a few minutes before serving.
