Aloo Shaak

Aloo Shaak is a simple Indian potato curry prepared with boiled potatoes, spices, and herbs, cooked in a pan.

Instructions

  1. Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add minced garlic, grated ginger, and slit green chilies. Sauté for another minute.
  4. Add chopped tomatoes and cook until they become soft and mushy.
  5. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
  6. Add diced potatoes and mix to coat them with the spices.
  7. Pour in water, cover the pan, and let it simmer for 10-15 minutes until the potatoes are cooked through.
  8. Garnish with chopped coriander leaves and serve hot.
