Bateta Nu Shaak
Bateta Nu Shaak is a Gujarati potato curry made by simmering potatoes with spices and tomatoes.

| Coriander Leaves (chopped for garnish) | 1 | Bunch |

Instructions
- Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
- Add chopped onions, green chilies, ginger, and garlic. Sauté until the onions turn translucent.
- Add chopped tomatoes and cook until they soften.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Add diced potatoes and mix to coat them with the spices.
- Pour in water, cover the pan, and let it simmer until the potatoes are cooked through.
- Garnish with chopped coriander leaves before serving.
