Bharwa Karela

Bharwa Karela is a stuffed bitter gourd dish prepared with a spiced filling of onions, spices, and gram flour, cooked until tender.

Instructions

  1. Cut a slit lengthwise on each bitter gourd and remove the seeds.
  2. Rub the bitter gourds with salt and set aside for 30 minutes to reduce bitterness.
  3. Rinse the bitter gourds thoroughly and pat dry.
  4. In a bowl, mix chopped onions, roasted gram flour, coriander powder, cumin powder, turmeric powder, red chili powder, crushed fennel seeds, salt, sugar, and lemon juice to prepare the stuffing.
  5. Stuff each bitter gourd with the prepared mixture and secure with a thread if necessary.
  6. Heat oil in a pan and place the stuffed bitter gourds in it.
  7. Cook on low heat, turning occasionally, until the bitter gourds are tender and evenly cooked, about 20-25 minutes.
  8. Remove from heat and serve warm.
