Bharwa Karela
Bharwa Karela is a stuffed bitter gourd dish prepared with a spiced filling of onions, spices, and gram flour, cooked until tender.

Instructions
- Cut a slit lengthwise on each bitter gourd and remove the seeds.
- Rub the bitter gourds with salt and set aside for 30 minutes to reduce bitterness.
- Rinse the bitter gourds thoroughly and pat dry.
- In a bowl, mix chopped onions, roasted gram flour, coriander powder, cumin powder, turmeric powder, red chili powder, crushed fennel seeds, salt, sugar, and lemon juice to prepare the stuffing.
- Stuff each bitter gourd with the prepared mixture and secure with a thread if necessary.
- Heat oil in a pan and place the stuffed bitter gourds in it.
- Cook on low heat, turning occasionally, until the bitter gourds are tender and evenly cooked, about 20-25 minutes.
- Remove from heat and serve warm.

- Rub bitter gourds with salt and let them sit for 30 minutes to reduce bitterness.
