Bhature

Bhature is a deep-fried bread made from a dough of all-purpose flour, yogurt, and spices, typically served with chickpea curry.

Ingredients

Instructions

  1. In a large bowl, mix all-purpose flour, baking powder, baking soda, sugar, and salt.
  2. Add yogurt and melted ghee to the dry ingredients and mix well.
  3. Gradually add lukewarm water and knead into a smooth, soft dough.
  4. Cover the dough with a damp cloth and let it rest for at least 2 hours.
  5. After resting, divide the dough into equal portions and roll each into a ball.
  6. Flatten each ball into a disc using a rolling pin, about 6 inches in diameter.
  7. Heat oil in a deep frying pan over medium heat.
  8. Fry each disc in hot oil until it puffs up and turns golden brown on both sides.
  9. Remove the bhature from the oil and drain on paper towels.

Prep

  • Let the dough rest for at least 2 hours before frying.
