Bhature
Bhature is a deep-fried bread made from a dough of all-purpose flour, yogurt, and spices, typically served with chickpea curry.

Instructions
- In a large bowl, mix all-purpose flour, baking powder, baking soda, sugar, and salt.
- Add yogurt and melted ghee to the dry ingredients and mix well.
- Gradually add lukewarm water and knead into a smooth, soft dough.
- Cover the dough with a damp cloth and let it rest for at least 2 hours.
- After resting, divide the dough into equal portions and roll each into a ball.
- Flatten each ball into a disc using a rolling pin, about 6 inches in diameter.
- Heat oil in a deep frying pan over medium heat.
- Fry each disc in hot oil until it puffs up and turns golden brown on both sides.
- Remove the bhature from the oil and drain on paper towels.
Prep
- Let the dough rest for at least 2 hours before frying.
