Bhindi Nu Shaak
Bhindi Nu Shaak is a Gujarati-style okra curry prepared with spices, tomatoes, and onions, cooked until tender.

Instructions
- Heat vegetable oil in a pan over medium heat.
- Add cumin seeds and mustard seeds to the hot oil and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add minced garlic, grated ginger, and slit green chilies. Sauté for another minute.
- Add chopped tomatoes and cook until they soften.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Add the cut okra pieces and stir to coat them with the spice mixture.
- Cover the pan and cook on low heat for 15-20 minutes, stirring occasionally, until the okra is tender.
- Garnish with chopped fresh coriander leaves before serving.
