Bhindi Nu Shaak

Bhindi Nu Shaak is a Gujarati-style okra curry prepared with spices, tomatoes, and onions, cooked until tender.

Instructions

  1. Heat vegetable oil in a pan over medium heat.
  2. Add cumin seeds and mustard seeds to the hot oil and let them splutter.
  3. Add chopped onions and sauté until they turn golden brown.
  4. Add minced garlic, grated ginger, and slit green chilies. Sauté for another minute.
  5. Add chopped tomatoes and cook until they soften.
  6. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  7. Add the cut okra pieces and stir to coat them with the spice mixture.
  8. Cover the pan and cook on low heat for 15-20 minutes, stirring occasionally, until the okra is tender.
  9. Garnish with chopped fresh coriander leaves before serving.
