Bhindi Subzi
Bhindi Subzi is a simple Indian dish made by sautéing okra with spices and onions.

| Garam Masala | 0.5 | Tsp |

| Vegetable Oil | 3 | Tbsp |
| Cilantro (chopped for garnish) | 1 | Bunch |
Instructions
- Heat vegetable oil in a pan over medium heat.
- Add cumin seeds and let them splutter.
- Add sliced onions and sauté until they turn golden brown.
- Add minced garlic, grated ginger, and slit green chilies. Sauté for another minute.
- Add chopped tomatoes and cook until they become soft.
- Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
- Add the okra pieces and stir to coat them with the spice mixture.
- Cover the pan and cook on low heat for 15-20 minutes, stirring occasionally, until the okra is tender.
- Add garam masala and mix well. Cook for another 2 minutes.
- Garnish with chopped cilantro and serve hot.
