Corn and Palak with Tofu

Instructions

  1. Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add minced garlic and grated ginger, sauté for another minute.
  4. Stir in the tomato puree and cook until the oil separates from the mixture.
  5. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
  6. Add the chopped spinach and corn kernels, stir to combine.
  7. Pour in the water, cover, and let it simmer for 5-7 minutes.
  8. Add the cubed tofu and garam masala, gently mix and cook for another 5 minutes.
  9. Adjust seasoning if necessary and serve hot.
