Corn and Palak with Tofu

Instructions
- Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add minced garlic and grated ginger, sauté for another minute.
- Stir in the tomato puree and cook until the oil separates from the mixture.
- Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
- Add the chopped spinach and corn kernels, stir to combine.
- Pour in the water, cover, and let it simmer for 5-7 minutes.
- Add the cubed tofu and garam masala, gently mix and cook for another 5 minutes.
- Adjust seasoning if necessary and serve hot.
