Dudhi Thepla
Dudhi Thepla is a spiced Indian flatbread made with grated bottle gourd, whole wheat flour, and spices, cooked on a griddle.

| Oil (for kneading and cooking) | 3 | Tbsp |
| Water (as needed for dough) | 100 | Ml |
Instructions
- In a large mixing bowl, combine grated bottle gourd, whole wheat flour, yogurt, chopped coriander leaves, chopped green chili, grated ginger, turmeric powder, red chili powder, cumin seeds, and salt.
- Add 1 tablespoon of oil to the mixture and mix well. Gradually add water as needed to form a soft dough.
- Divide the dough into equal portions and roll each portion into a ball.
- Flatten each dough ball slightly and roll it out into a thin circle using a rolling pin.
- Heat a griddle over medium heat and place the rolled thepla on it.
- Cook the thepla on one side until small bubbles appear, then flip it over.
- Apply a little oil on the cooked side, flip again, and apply oil on the other side as well.
- Cook until both sides are golden brown and cooked through. Repeat with remaining dough balls.
