Gatte ki Sabji

Gatte ki Sabji is a Rajasthani curry made with gram flour dumplings cooked in a spiced yogurt sauce.

Instructions

  1. In a bowl, mix gram flour, salt, turmeric powder, red chili powder, and 1 tbsp of oil. Add water gradually to form a stiff dough.
  2. Divide the dough into equal portions and roll them into cylindrical shapes.
  3. Boil water in a pot and add the rolled dough. Cook until they float on the surface. Remove and let them cool.
  4. Cut the boiled dough into small pieces to form gatte.
  5. Heat oil in a pan, add cumin seeds, mustard seeds, and asafoetida. Let them splutter.
  6. Add grated ginger and chopped green chilies to the pan. Sauté for a minute.
  7. Add whisked yogurt, turmeric powder, red chili powder, coriander powder, and salt. Stir continuously to prevent curdling.
  8. Add the gatte pieces to the yogurt mixture and let it simmer for 10-15 minutes.
  9. Sprinkle garam masala and garnish with chopped coriander leaves before serving.
