Gatte ki Sabji
Gatte ki Sabji is a Rajasthani curry made with gram flour dumplings cooked in a spiced yogurt sauce.

Instructions
- In a bowl, mix gram flour, salt, turmeric powder, red chili powder, and 1 tbsp of oil. Add water gradually to form a stiff dough.
- Divide the dough into equal portions and roll them into cylindrical shapes.
- Boil water in a pot and add the rolled dough. Cook until they float on the surface. Remove and let them cool.
- Cut the boiled dough into small pieces to form gatte.
- Heat oil in a pan, add cumin seeds, mustard seeds, and asafoetida. Let them splutter.
- Add grated ginger and chopped green chilies to the pan. Sauté for a minute.
- Add whisked yogurt, turmeric powder, red chili powder, coriander powder, and salt. Stir continuously to prevent curdling.
- Add the gatte pieces to the yogurt mixture and let it simmer for 10-15 minutes.
- Sprinkle garam masala and garnish with chopped coriander leaves before serving.
