Gobhi Paratha
Gobhi Paratha is an Indian flatbread stuffed with spiced grated cauliflower, prepared by kneading dough, stuffing, and cooking on a griddle.

Instructions
- In a large bowl, mix whole wheat flour and salt. Gradually add water and knead to form a soft dough. Cover and let it rest for 20 minutes.
- In another bowl, combine grated cauliflower, green chili, ginger, coriander leaves, cumin seeds, red chili powder, garam masala, and salt. Mix well to prepare the stuffing.
- Divide the dough into equal-sized balls. Roll each ball into a small circle, place a portion of the cauliflower stuffing in the center, and fold the edges to seal.
- Gently roll the stuffed dough ball into a flat circle, ensuring the stuffing does not spill out.
- Heat a griddle over medium heat. Place the rolled paratha on the griddle and cook for 1-2 minutes on each side, applying ghee, until golden brown.
- Repeat the process for the remaining dough and stuffing. Serve hot with yogurt or pickle.
