Gobi Sabzi
Gobi Sabzi is a simple Indian stir-fried cauliflower dish with spices and herbs, prepared in a skillet.

Instructions
- Heat oil in a skillet over medium heat and add cumin seeds. Let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add minced garlic, grated ginger, and slit green chilies. Sauté for a minute.
- Add chopped tomatoes and cook until they become soft and mushy.
- Stir in turmeric powder, red chili powder, and coriander powder. Mix well.
- Add cauliflower florets and diced potatoes. Mix to coat them with the spice mixture.
- Cover the skillet and cook on low heat for 15-20 minutes, stirring occasionally, until the vegetables are tender.
- Add garam masala and salt. Stir well and cook for another 2-3 minutes.
- Garnish with chopped cilantro before serving.
