Green Beans Sabzi

A simple stir-fry of green beans with spices and aromatics, cooked until tender.

Instructions

  1. Heat oil in a large pan over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
  2. Add curry leaves, minced garlic, and grated ginger. Sauté for 1 minute until fragrant.
  3. Add chopped onions and cook until they turn translucent.
  4. Stir in chopped tomatoes and cook until they soften.
  5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  6. Add the green beans and stir to coat them with the spices.
  7. Pour in water, cover the pan, and let the beans cook for 10-15 minutes until tender.
  8. Uncover and cook for another 2-3 minutes to evaporate any excess moisture.
  9. Adjust seasoning if necessary and serve hot.
