Green Beans Sabzi
A simple stir-fry of green beans with spices and aromatics, cooked until tender.

Instructions
- Heat oil in a large pan over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
- Add curry leaves, minced garlic, and grated ginger. Sauté for 1 minute until fragrant.
- Add chopped onions and cook until they turn translucent.
- Stir in chopped tomatoes and cook until they soften.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Add the green beans and stir to coat them with the spices.
- Pour in water, cover the pan, and let the beans cook for 10-15 minutes until tender.
- Uncover and cook for another 2-3 minutes to evaporate any excess moisture.
- Adjust seasoning if necessary and serve hot.
