Karela Bateta Nu Shaak
Karela Bateta Nu Shaak is a Gujarati dish made by sautéing bitter gourd and potatoes with spices.

Instructions
- Heat vegetable oil in a pan over medium heat.
- Add mustard seeds and cumin seeds to the hot oil and let them splutter.
- Add chopped onions and sauté until they turn translucent.
- Add sliced bitter gourd and diced potatoes to the pan and mix well.
- Add turmeric powder, red chili powder, coriander powder, and salt. Stir to combine.
- Cover the pan and let the vegetables cook on low heat for about 15-20 minutes, stirring occasionally.
- Add chopped tomatoes and sugar, mix well, and cook for another 5 minutes until tomatoes are soft.
- Garnish with chopped fresh coriander leaves before serving.
Prep
- Soak sliced bitter gourd in salted water for 30 minutes to reduce bitterness.
