Kobi Bateta Nu Shaak

Kobi Bateta Nu Shaak is a Gujarati-style cabbage and potato curry cooked with spices and herbs.

Instructions

  1. Heat oil in a large pan over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
  2. Add chopped onions and sauté until they turn translucent.
  3. Add minced garlic, grated ginger, and slit green chilies. Sauté for another minute.
  4. Add chopped tomatoes and cook until they become soft and mushy.
  5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  6. Add diced potatoes and mix to coat them with the spices. Cover and cook for 5 minutes.
  7. Add chopped cabbage, mix well, cover, and cook for 10-15 minutes, stirring occasionally, until the vegetables are tender.
  8. Sprinkle garam masala and mix well. Cook for another 2 minutes.
  9. Garnish with chopped coriander leaves and serve hot.
