Kobi Bateta Nu Shaak
Kobi Bateta Nu Shaak is a Gujarati-style cabbage and potato curry cooked with spices and herbs.

| Coriander Leaves (fresh, chopped) | 1 | Bunch |
Instructions
- Heat oil in a large pan over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
- Add chopped onions and sauté until they turn translucent.
- Add minced garlic, grated ginger, and slit green chilies. Sauté for another minute.
- Add chopped tomatoes and cook until they become soft and mushy.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Add diced potatoes and mix to coat them with the spices. Cover and cook for 5 minutes.
- Add chopped cabbage, mix well, cover, and cook for 10-15 minutes, stirring occasionally, until the vegetables are tender.
- Sprinkle garam masala and mix well. Cook for another 2 minutes.
- Garnish with chopped coriander leaves and serve hot.
