Lauki Chana Dal

Lauki Chana Dal is a simple Indian dish made by simmering bottle gourd and split chickpeas with spices.

Instructions

  1. Heat oil in a large pot over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add minced garlic, grated ginger, and slit green chilies. Sauté for another minute.
  4. Add chopped tomatoes and cook until they become soft and oil starts to separate.
  5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  6. Add diced bottle gourd and soaked chana dal. Stir to combine with the spices.
  7. Pour in water and bring to a boil. Reduce heat, cover, and simmer for 30-35 minutes or until chana dal is cooked.
  8. Stir in garam masala and adjust seasoning if needed.
  9. Garnish with chopped cilantro before serving.
