Lauki Subzi
Lauki Subzi is a simple Indian curry made by sautéing bottle gourd with spices and simmering it in a tomato-based sauce.

Instructions
- Heat oil in a pan over medium heat and add cumin seeds. Allow them to splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add grated ginger, minced garlic, and slit green chilies. Sauté for another minute.
- Add tomato puree and cook until the oil separates from the mixture.
- Stir in turmeric powder, coriander powder, red chili powder, and salt. Mix well.
- Add the chopped bottle gourd and mix to coat it with the spice mixture.
- Cover the pan and let it simmer on low heat until the bottle gourd is tender, about 15-20 minutes.
- Once cooked, sprinkle garam masala and mix well.
- Garnish with chopped fresh coriander leaves before serving.
