Lauki Subzi

Lauki Subzi is a simple Indian curry made by sautéing bottle gourd with spices and simmering it in a tomato-based sauce.

Instructions

  1. Heat oil in a pan over medium heat and add cumin seeds. Allow them to splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add grated ginger, minced garlic, and slit green chilies. Sauté for another minute.
  4. Add tomato puree and cook until the oil separates from the mixture.
  5. Stir in turmeric powder, coriander powder, red chili powder, and salt. Mix well.
  6. Add the chopped bottle gourd and mix to coat it with the spice mixture.
  7. Cover the pan and let it simmer on low heat until the bottle gourd is tender, about 15-20 minutes.
  8. Once cooked, sprinkle garam masala and mix well.
  9. Garnish with chopped fresh coriander leaves before serving.
