Mix Veg Paratha is a stuffed flatbread made with whole wheat flour and a variety of vegetables, cooked on a griddle.

Instructions

  1. In a bowl, mix whole wheat flour, salt, and oil. Gradually add water and knead to form a soft dough. Cover and let it rest for 20 minutes.
  2. In another bowl, combine mashed potatoes, grated carrot, boiled peas, grated cauliflower, chopped green chili, grated ginger, chopped coriander leaves, cumin seeds, red chili powder, garam masala, and salt. Mix well to prepare the filling.
  3. Divide the dough into equal portions and roll each portion into a ball. Flatten each ball slightly.
  4. Take one dough ball, roll it out into a small circle, place a portion of the vegetable filling in the center, and bring the edges together to seal.
  5. Gently roll the stuffed dough ball into a flat circle, ensuring the filling does not spill out.
  6. Heat a griddle over medium heat. Place the rolled paratha on the griddle and cook until brown spots appear on both sides, applying butter as needed.
  7. Repeat the process for the remaining dough and filling. Serve hot with yogurt or pickle.
