Mixed Veg Curry
Mixed Veg Curry is a flavorful dish prepared by simmering assorted vegetables in a spiced tomato and coconut milk sauce.

Instructions
- Heat vegetable oil in a large pot over medium heat and add cumin seeds. Sauté until they start to crackle.
- Add chopped onions, garlic, and ginger. Sauté until the onions are translucent.
- Stir in the tomato puree and cook for 5 minutes until the oil separates from the mixture.
- Add curry powder, turmeric powder, and salt. Mix well.
- Add potatoes, carrots, green beans, and cauliflower. Stir to coat the vegetables with the spice mixture.
- Pour in the coconut milk and bring the mixture to a boil. Reduce heat to low and cover the pot.
- Simmer for 15-20 minutes or until the vegetables are tender.
- Add green peas and cook for an additional 5 minutes.
- Garnish with chopped cilantro before serving.
