Muthiya
Muthiya is a steamed and pan-fried dumpling made from grated vegetables and spices, often served as a snack or side dish.

Instructions
- In a large bowl, combine whole wheat flour, gram flour, grated bottle gourd, chopped spinach, grated ginger, chopped green chili, cumin seeds, turmeric powder, red chili powder, sugar, salt, lemon juice, and baking soda.
- Mix the ingredients well to form a dough. Add water if necessary to achieve a soft dough consistency.
- Divide the dough into equal portions and shape each portion into cylindrical rolls.
- Place the rolls in a steamer and steam for 20-25 minutes until cooked through.
- Allow the steamed rolls to cool slightly, then cut them into slices.
- Heat oil in a pan, add mustard seeds and sesame seeds. Once they splutter, add the sliced muthiya and sauté until they are golden brown and crispy.
- Garnish with chopped coriander leaves and serve warm.
Prep
- Grate the bottle gourd and squeeze out excess water if necessary.
