Mutton Rogan Josh is a slow-cooked dish with mutton, spices, and yogurt, simmered to perfection.

Coriander Powder (ground)2Tsp

Asafoetida (a pinch)1Tsp
Salt (or to taste)2Tsp
Water (for cooking)500Milliliters

Instructions

  1. Heat ghee in a large pot over medium heat. Add cinnamon, cardamom, cloves, and bay leaves. Sauté until fragrant.
  2. Add sliced onions and sauté until golden brown.
  3. Add grated ginger and minced garlic. Sauté for a minute.
  4. Add mutton pieces and cook until they are browned on all sides.
  5. Lower the heat and add whisked yogurt, stirring continuously to prevent curdling.
  6. Add kashmiri red chili powder, coriander powder, fennel powder, asafoetida, and salt. Mix well.
  7. Pour in water, bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours until mutton is tender.
  8. Adjust seasoning if necessary and serve hot with rice or naan.

Prep

  • Thaw mutton if frozen, at least 4 hours before cooking.
