Mutton Rogan Josh
Mutton Rogan Josh is a slow-cooked dish with mutton, spices, and yogurt, simmered to perfection.

Instructions
- Heat ghee in a large pot over medium heat. Add cinnamon, cardamom, cloves, and bay leaves. Sauté until fragrant.
- Add sliced onions and sauté until golden brown.
- Add grated ginger and minced garlic. Sauté for a minute.
- Add mutton pieces and cook until they are browned on all sides.
- Lower the heat and add whisked yogurt, stirring continuously to prevent curdling.
- Add kashmiri red chili powder, coriander powder, fennel powder, asafoetida, and salt. Mix well.
- Pour in water, bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours until mutton is tender.
- Adjust seasoning if necessary and serve hot with rice or naan.
Prep
- Thaw mutton if frozen, at least 4 hours before cooking.
