Navratan Korma

Navratan Korma is a rich, creamy curry made with mixed vegetables, nuts, and paneer, cooked in a spiced yogurt and cream sauce.

Instructions

  1. Heat ghee in a large pan and add cumin seeds. Let them splutter.
  2. Add chopped onions, ginger, garlic, and green chilies. Sauté until onions turn golden brown.
  3. Add coriander powder, turmeric powder, and salt. Mix well.
  4. Add diced carrots, potatoes, cauliflower, and green beans. Stir and cook for 5 minutes.
  5. Add green peas, soaked cashew nuts, almonds, and raisins. Mix well.
  6. Pour in whisked yogurt and water. Stir to combine and bring to a simmer.
  7. Cover and cook on low heat for 15-20 minutes until vegetables are tender.
  8. Add paneer cubes and heavy cream. Stir gently and cook for another 5 minutes.
  9. Sprinkle garam masala and sugar. Mix well and cook for 2 more minutes.
  10. Serve hot with rice or naan.

Prep

  • Soak cashew nuts in water for 30 minutes
  • Blanch and peel almonds
