Navratan Korma
Navratan Korma is a rich, creamy curry made with mixed vegetables, nuts, and paneer, cooked in a spiced yogurt and cream sauce.

Instructions
- Heat ghee in a large pan and add cumin seeds. Let them splutter.
- Add chopped onions, ginger, garlic, and green chilies. Sauté until onions turn golden brown.
- Add coriander powder, turmeric powder, and salt. Mix well.
- Add diced carrots, potatoes, cauliflower, and green beans. Stir and cook for 5 minutes.
- Add green peas, soaked cashew nuts, almonds, and raisins. Mix well.
- Pour in whisked yogurt and water. Stir to combine and bring to a simmer.
- Cover and cook on low heat for 15-20 minutes until vegetables are tender.
- Add paneer cubes and heavy cream. Stir gently and cook for another 5 minutes.
- Sprinkle garam masala and sugar. Mix well and cook for 2 more minutes.
- Serve hot with rice or naan.
