Papdi Nu Shaak
Papdi Nu Shaak is a Gujarati dish made by sautéing flat beans with spices and tomatoes.

| Coriander Leaves (finely chopped for garnish) | 1 | Bunch |
Instructions
- Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
- Add chopped onions, garlic, and ginger. Sauté until the onions turn translucent.
- Add the slit green chilies and sauté for another minute.
- Add chopped tomatoes and cook until they become soft and mushy.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Add the diced potatoes and flat beans. Stir to coat the vegetables with the spices.
- Cover the pan and let it cook on low heat for about 15-20 minutes, stirring occasionally, until the vegetables are cooked through.
- Garnish with chopped coriander leaves before serving.
