Papdi Nu Shaak

Papdi Nu Shaak is a Gujarati dish made by sautéing flat beans with spices and tomatoes.

Instructions

  1. Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
  2. Add chopped onions, garlic, and ginger. Sauté until the onions turn translucent.
  3. Add the slit green chilies and sauté for another minute.
  4. Add chopped tomatoes and cook until they become soft and mushy.
  5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  6. Add the diced potatoes and flat beans. Stir to coat the vegetables with the spices.
  7. Cover the pan and let it cook on low heat for about 15-20 minutes, stirring occasionally, until the vegetables are cooked through.
  8. Garnish with chopped coriander leaves before serving.
