Poha
Poha is a quick Indian breakfast dish made by soaking flattened rice and sautéing with spices and vegetables.

| Cilantro (fresh, chopped) | 1 | Bunch |

Instructions
- Rinse the flattened rice in a colander under running water until it softens, then drain and set aside.
- Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add curry leaves, green chilies, and chopped onions. Sauté until the onions turn translucent.
- Add diced potatoes and cook until they are tender.
- Stir in turmeric powder, salt, and sugar. Mix well.
- Add the drained flattened rice and roasted peanuts to the pan. Mix gently to combine all ingredients.
- Squeeze lemon juice over the poha and mix well.
- Garnish with chopped cilantro and serve hot.
Prep
- Rinse and soak the flattened rice 15 minutes before cooking.
