Poha

Poha is a quick Indian breakfast dish made by soaking flattened rice and sautéing with spices and vegetables.

Instructions

  1. Rinse the flattened rice in a colander under running water until it softens, then drain and set aside.
  2. Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
  3. Add curry leaves, green chilies, and chopped onions. Sauté until the onions turn translucent.
  4. Add diced potatoes and cook until they are tender.
  5. Stir in turmeric powder, salt, and sugar. Mix well.
  6. Add the drained flattened rice and roasted peanuts to the pan. Mix gently to combine all ingredients.
  7. Squeeze lemon juice over the poha and mix well.
  8. Garnish with chopped cilantro and serve hot.

Prep

  • Rinse and soak the flattened rice 15 minutes before cooking.
