Potato Curry
Potato curry is a simple dish made by simmering potatoes in a spiced tomato and coconut milk sauce.

Instructions
- Heat vegetable oil in a large pan over medium heat.
- Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onions and sauté until they are golden brown.
- Add minced garlic and grated ginger, sauté for another minute.
- Add chopped tomatoes and cook until they are soft and mushy.
- Stir in coriander powder, turmeric powder, red chili powder, and salt.
- Add diced potatoes and mix well to coat them with the spices.
- Pour in coconut milk and bring the mixture to a boil.
- Reduce heat to low, cover the pan, and let it simmer until the potatoes are tender.
- Stir in garam masala and cook for another 2 minutes.
- Garnish with chopped cilantro before serving.
