Potato Curry

Potato curry is a simple dish made by simmering potatoes in a spiced tomato and coconut milk sauce.

Instructions

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add cumin seeds and let them sizzle for a few seconds.
  3. Add chopped onions and sauté until they are golden brown.
  4. Add minced garlic and grated ginger, sauté for another minute.
  5. Add chopped tomatoes and cook until they are soft and mushy.
  6. Stir in coriander powder, turmeric powder, red chili powder, and salt.
  7. Add diced potatoes and mix well to coat them with the spices.
  8. Pour in coconut milk and bring the mixture to a boil.
  9. Reduce heat to low, cover the pan, and let it simmer until the potatoes are tender.
  10. Stir in garam masala and cook for another 2 minutes.
  11. Garnish with chopped cilantro before serving.
