Potato Sabzi

A simple Indian dish made by sautéing potatoes with spices and herbs, perfect for a quick meal.

Instructions

  1. Heat oil in a large pan over medium heat.
  2. Add cumin seeds and mustard seeds, and let them splutter.
  3. Add chopped onions and sauté until they turn golden brown.
  4. Add minced garlic, grated ginger, and slit green chilies. Sauté for another minute.
  5. Add chopped tomatoes and cook until they become soft and mushy.
  6. Stir in turmeric powder, red chili powder, coriander powder, and salt.
  7. Add diced potatoes and mix well to coat them with the spices.
  8. Cover the pan and cook on low heat for 15-20 minutes, stirring occasionally, until potatoes are tender.
  9. Garnish with chopped coriander leaves before serving.
