Potato Sabzi
A simple Indian dish made by sautéing potatoes with spices and herbs, perfect for a quick meal.

Instructions
- Heat oil in a large pan over medium heat.
- Add cumin seeds and mustard seeds, and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add minced garlic, grated ginger, and slit green chilies. Sauté for another minute.
- Add chopped tomatoes and cook until they become soft and mushy.
- Stir in turmeric powder, red chili powder, coriander powder, and salt.
- Add diced potatoes and mix well to coat them with the spices.
- Cover the pan and cook on low heat for 15-20 minutes, stirring occasionally, until potatoes are tender.
- Garnish with chopped coriander leaves before serving.
