Sev Tameta Nu Shaak
Sev Tameta Nu Shaak is a Gujarati curry made with tomatoes and spices, topped with sev. It is cooked in a simple manner using basic spices and ingredients.

Instructions
- Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
- Add chopped onions, green chilies, ginger, and garlic. Sauté until the onions turn translucent.
- Add chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Add water and grated jaggery. Stir to combine and bring the mixture to a boil.
- Reduce the heat and let it simmer for 10-15 minutes until the tomatoes are cooked and the curry thickens.
- Turn off the heat and transfer the curry to a serving dish.
- Top with sev and garnish with chopped fresh coriander before serving.
