Tindora Fry
Tindora Fry is a simple stir-fried dish made with sliced ivy gourd, spices, and herbs, cooked until crispy.

Instructions
- Heat oil in a pan over medium heat.
- Add mustard seeds and cumin seeds, and let them splutter.
- Add minced garlic, chopped onion, green chilies, and curry leaves. Sauté until onions are translucent.
- Add sliced ivy gourd, turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Cover the pan and cook on low heat for 15-20 minutes, stirring occasionally, until the ivy gourd is cooked and slightly crispy.
- Remove the lid and increase the heat to medium-high. Stir-fry for another 5 minutes to get a crispy texture.
- Garnish with chopped fresh coriander and serve hot.
