Tindora Fry is a simple stir-fried dish made with sliced ivy gourd, spices, and herbs, cooked until crispy.

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add mustard seeds and cumin seeds, and let them splutter.
  3. Add minced garlic, chopped onion, green chilies, and curry leaves. Sauté until onions are translucent.
  4. Add sliced ivy gourd, turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  5. Cover the pan and cook on low heat for 15-20 minutes, stirring occasionally, until the ivy gourd is cooked and slightly crispy.
  6. Remove the lid and increase the heat to medium-high. Stir-fry for another 5 minutes to get a crispy texture.
  7. Garnish with chopped fresh coriander and serve hot.
