Tindora Nu Shaak
Tindora Nu Shaak is a Gujarati-style stir-fried dish made with sliced ivy gourd, spices, and herbs, cooked until tender.

Instructions
- Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
- Add chopped onions and sauté until they turn translucent.
- Add minced garlic, grated ginger, and slit green chilies. Sauté for another minute.
- Add chopped tomatoes and cook until they become soft.
- Add sliced ivy gourd, turmeric powder, red chili powder, coriander powder, salt, and sugar. Mix well.
- Cover the pan and cook on low heat for 15-20 minutes, stirring occasionally, until the ivy gourd is tender.
- Garnish with chopped coriander leaves and serve hot.
