Tindora Nu Shaak

Tindora Nu Shaak is a Gujarati-style stir-fried dish made with sliced ivy gourd, spices, and herbs, cooked until tender.

Instructions

  1. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
  2. Add chopped onions and sauté until they turn translucent.
  3. Add minced garlic, grated ginger, and slit green chilies. Sauté for another minute.
  4. Add chopped tomatoes and cook until they become soft.
  5. Add sliced ivy gourd, turmeric powder, red chili powder, coriander powder, salt, and sugar. Mix well.
  6. Cover the pan and cook on low heat for 15-20 minutes, stirring occasionally, until the ivy gourd is tender.
  7. Garnish with chopped coriander leaves and serve hot.
