Veg Dry Sabzi with Paneer

A dry Indian-style vegetable dish with paneer, cooked with spices and vegetables.

Instructions

  1. Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add minced garlic and grated ginger, sauté for another minute.
  4. Add chopped tomatoes and cook until they become soft and oil starts to separate.
  5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  6. Add diced potatoes and carrots, stir well to coat them with the spices.
  7. Cover the pan and cook for 10 minutes, stirring occasionally, until the vegetables are partially cooked.
  8. Add green peas and green bell pepper, mix well and cook for another 5 minutes.
  9. Add cubed paneer and garam masala, gently mix to combine all ingredients.
  10. Cook for another 5 minutes, allowing the paneer to absorb the flavors.
  11. Garnish with chopped fresh coriander and serve hot.
