Veg Dry Sabzi with Paneer
A dry Indian-style vegetable dish with paneer, cooked with spices and vegetables.

Instructions
- Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add minced garlic and grated ginger, sauté for another minute.
- Add chopped tomatoes and cook until they become soft and oil starts to separate.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Add diced potatoes and carrots, stir well to coat them with the spices.
- Cover the pan and cook for 10 minutes, stirring occasionally, until the vegetables are partially cooked.
- Add green peas and green bell pepper, mix well and cook for another 5 minutes.
- Add cubed paneer and garam masala, gently mix to combine all ingredients.
- Cook for another 5 minutes, allowing the paneer to absorb the flavors.
- Garnish with chopped fresh coriander and serve hot.
