Veg Pulao

Veg Pulao is a fragrant rice dish cooked with basmati rice, mixed vegetables, and spices.

Instructions

  1. Heat ghee in a large pot over medium heat. Add cumin seeds, bay leaf, cinnamon stick, cloves, and cardamom pods. Sauté until fragrant.
  2. Add sliced onions and sauté until golden brown.
  3. Add grated ginger, minced garlic, and slit green chilies. Sauté for another minute.
  4. Add diced carrots, chopped green beans, green peas, and diced potato. Stir well and cook for 5 minutes.
  5. Drain the soaked rice and add it to the pot. Stir gently to mix with the vegetables and spices.
  6. Pour in 4 cups of water and add salt. Stir and bring to a boil.
  7. Reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
  8. Turn off the heat and let the pulao sit covered for 5 minutes.
  9. Fluff the rice gently with a fork. Garnish with chopped cilantro and mint leaves before serving.

Prep

  • Rinse and soak basmati rice for 30 minutes.
