Veg Pulao
Veg Pulao is a fragrant rice dish cooked with basmati rice, mixed vegetables, and spices.

Instructions
- Heat ghee in a large pot over medium heat. Add cumin seeds, bay leaf, cinnamon stick, cloves, and cardamom pods. Sauté until fragrant.
- Add sliced onions and sauté until golden brown.
- Add grated ginger, minced garlic, and slit green chilies. Sauté for another minute.
- Add diced carrots, chopped green beans, green peas, and diced potato. Stir well and cook for 5 minutes.
- Drain the soaked rice and add it to the pot. Stir gently to mix with the vegetables and spices.
- Pour in 4 cups of water and add salt. Stir and bring to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
- Turn off the heat and let the pulao sit covered for 5 minutes.
- Fluff the rice gently with a fork. Garnish with chopped cilantro and mint leaves before serving.
Prep
- Rinse and soak basmati rice for 30 minutes.
