Instructions
- Drain the soaked sticky rice and set aside.
- In a large bowl, combine grated yuca, drained sticky rice, coconut milk, sugar, salt, and baking powder.
- Mix the ingredients thoroughly until well combined.
- Cut banana leaves into squares large enough to wrap the mixture, approximately 30 cm by 30 cm.
- Place a portion of the mixture in the center of each banana leaf square.
- Fold the banana leaf over the mixture to form a parcel and secure with kitchen twine if necessary.
- Place the wrapped parcels in a steamer and steam for 45 minutes.
- Preheat the oven to 180 degrees Celsius.
- After steaming, transfer the parcels to a baking sheet and brush with melted butter.
- Bake in the preheated oven for 15 minutes until the banana leaves are slightly browned.
- Remove from the oven and let cool slightly before serving.
