Instructions
- In a large bowl, mix chicken thighs with sumac, salt, and black pepper. Let it marinate for 30 minutes.
- Heat olive oil in a large pot over medium heat. Add the sliced onions and sauté until they are soft and translucent.
- Add minced garlic to the pot and cook for another minute until fragrant.
- Add the marinated chicken thighs to the pot, skin side down, and brown them on both sides.
- Pour in the chicken broth and lemon juice, then add the cinnamon stick and bay leaves.
- Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 45 minutes until the chicken is tender.
- Remove the cinnamon stick and bay leaves. Adjust seasoning with salt and pepper if needed.
- Garnish with chopped parsley before serving.
