Instructions

  1. In a large bowl, mix chicken thighs with sumac, salt, and black pepper. Let it marinate for 30 minutes.
  2. Heat olive oil in a large pot over medium heat. Add the sliced onions and sauté until they are soft and translucent.
  3. Add minced garlic to the pot and cook for another minute until fragrant.
  4. Add the marinated chicken thighs to the pot, skin side down, and brown them on both sides.
  5. Pour in the chicken broth and lemon juice, then add the cinnamon stick and bay leaves.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 45 minutes until the chicken is tender.
  7. Remove the cinnamon stick and bay leaves. Adjust seasoning with salt and pepper if needed.
  8. Garnish with chopped parsley before serving.
