Akbar Joojeh

Akbar Joojeh is a Persian dish made by marinating and grilling chicken, served with saffron rice and a tangy pomegranate sauce.

Instructions

  1. In a bowl, mix yogurt, saffron water, lemon juice, grated onion, minced garlic, salt, and black pepper.
  2. Add chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 4 hours.
  3. Preheat the grill to medium-high heat. Remove chicken from marinade and grill for 6-8 minutes on each side until fully cooked.
  4. Cook rice according to package instructions. Once cooked, stir in butter and a pinch of saffron.
  5. In a small saucepan, heat pomegranate molasses over low heat until slightly thickened.
  6. Serve grilled chicken with saffron rice and drizzle with pomegranate sauce.

Prep

  • Marinate chicken in yogurt mixture for at least 4 hours.
  • Soak saffron in warm water for 15 minutes.
