Dandeh Kabab
Dandeh Kabab is a Persian grilled lamb rib dish marinated with spices and herbs, then skewered and grilled over charcoal.

Instructions
- In a large bowl, mix grated onions, minced garlic, yogurt, saffron water, lemon juice, olive oil, salt, black pepper, and turmeric.
- Add the lamb ribs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 4 hours or overnight.
- Preheat a charcoal grill to medium-high heat.
- Thread the marinated lamb ribs onto skewers.
- Grill the skewered ribs over charcoal, turning occasionally, for about 15-20 minutes or until cooked through and slightly charred.
- Remove from grill and let rest for a few minutes. Sprinkle with sumac before serving.
