Dandeh Kabab

Dandeh Kabab is a Persian grilled lamb rib dish marinated with spices and herbs, then skewered and grilled over charcoal.

Instructions

  1. In a large bowl, mix grated onions, minced garlic, yogurt, saffron water, lemon juice, olive oil, salt, black pepper, and turmeric.
  2. Add the lamb ribs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 4 hours or overnight.
  3. Preheat a charcoal grill to medium-high heat.
  4. Thread the marinated lamb ribs onto skewers.
  5. Grill the skewered ribs over charcoal, turning occasionally, for about 15-20 minutes or until cooked through and slightly charred.
  6. Remove from grill and let rest for a few minutes. Sprinkle with sumac before serving.

  • Marinate lamb ribs for at least 4 hours or overnight.
